Our Favorite Summer Cocktails (and Soon to be Your Favorites, too!)

A strong sip of something delicious is always, always better in the middle of summer. Whether you dine alfresco at your favorite restaurant or pre-mix some cocktails for a day on the boat, we’re here to help with a couple of boozy recipes.

Not much of a bartender? No problem. Skip the shopping and stirring and head to North Beach Fish Camp for all of your favorite summer drinks.

Kiwi Melon Sangria

Red and white aren’t your only sangria options, anymore. This light (but deceptively strong) cocktail is perfect for parties and outdoor dinner parties. One just won’t be enough, so we made a recipe big enough for your whole group. You’ll thank us later.

 

Ingredients:

10 cups fresh watermelon, cubed

10 oz ripe strawberries, diced

5 cups honeydew, cubed

1 cucumber, sliced

2 lemons, sliced

1 lime, sliced

750 mL dry white wine, Chardonnay or Pinot Grigio would be perfect

1 cup vodka or white rum

½ cup orange or raspberry liqueur

2 cans ginger ale

Fresh mint

 

Have fun with the melon and berry combos! Use whatever you prefer or have on hand. First, put 2 cups of the watermelon and 1 cup of the honeydew in the freezer to make frozen cubes. Blend remaining 8 cups of the watermelon, 4 cups of the honeydew and a splash of vodka into a smooth mixture.

Strain the watermelon honeydew mixture into a pitcher to remove larger pieces. Add the remaining ingredients — both the fruits and liquids. Add the frozen fruit cubes and ice, garnish with fresh mint.

Skinny Grapefruit Martini

We hate to say it, but liquid calories count just as much as food. Whip up this irresistible martini to keep that weight gain at bay. This recipe is for a single serving at 160 calories, so adjust measurements for larger groups (or if you splurge and have more than one).

 

Ingredients:

1 oz grapefruit juice

1 oz simple syrup (use a sugar substitute to cut calories)

1.5-2 oz Gin

Splash of Prosecco

3 basil leaves

 

Muddle 2 basil leaves and the simple syrup in the bottom of a shaker. Add ice and remaining ingredients. Shake! Pour into a martini glass and top with a Prosecco floater. Garnish with a twist of grapefruit and the remaining basil sprig.
